Rice & Lentils pilaf (Mdardara) - مدردرة


Serves 4

Ingredient:
1 cup of lentils
1 cup of white rice
1 cup of olive oil
2 onions sliced (medium half circles)
1 tablespoon of allspice
1 tablespoon of cumin
Salt, pepper to taste
5 cups of water

In a pan, add the 5 cups of water and the lentils, cook on medium until the lentils are half way cooked, then add the rice then the allspice, cumin, salt and pepper. Let them cook on low. Meanwhile, in a skillet, add olive oil and the onions, season with some salt and pepper and let them brown but be careful not to burn them. After the onions are ready, drain the remaining olive oil and add it to the lentils and rice that are cooking. After the rice and lentils are cooked and the water is absorbed, transfer to the serving plate and add the onions on top. Serve with plain yogurt or a salad.

    i never made mdardara with olive oil before, i kinda chicken out when using it in cooked meals because the flavor is so strong, but i mean in a good way! next time i will.

    Found your blog via Laurie's Med. Cooking in Alaska. We love Lebanese food and since Hawaii doesn't have any I'm thrilled to find you! We're going to try your Tabbouli for sure b/c I've tried recreating one from memory of our favorite Lebanese restaurant and I'm still not getting the lemon and oil balance right. This rice and lentil dish also looks wonderful, and we have been having an Indian rice-lentil dish at least once a week for a couple of months now, so I'm going to try your recipe this week for a nice change of pace.

    On a different note, I also want to add our prayers to yours for peace in Lebanon soon.

    Thanks for stopping by :) I am glad that you like Lebanese food :) Here's a tip for the balance of olive oil and lemon in Tabbouli: for every bunch of parsley, use 1 small lemon and the same amount of its juice for olive oil ;) I hope you like the lentils and rice, that's one of my favorites too.
