Lebanese Potato Salad - سلطة البطاطا


Serves 4
Ingredients:
4 medium potatoes (any kind except sweet)
1/2 red onion
1 green onion
2 medium tomatoes
Half a bell pepper (if it's big otherwise 1 small)
1 crushed clove of garlic
1/2 cup of fresh mint
1/2 cup fresh chopped parsley
2 tablespoons of fresh thyme
Juice of a lemon
1/2 cup of olive oil
Salt & pepper to taste
A dash of cayenne paper (optional)

Peel the potatoes and cut in medium cubes. In a pan, bring water to a boil with 1 teaspoon of salt, add the potatoes and cook for 12 minutes or until cooked but you don't wanted them to fall apart. Drain and let cool. In the meantime, slice the onions and add to a bowl. Add the medium cut tomatoes, diced bell pepper, garlic, parsley, mint, thyme. Now add the potatoes, lemon juice, olive oil and all the spices and mix the salad and serve with a dash of cayenne pepper.

PS: You can skip the fresh mint and substitute the fresh thyme with dry thyme if not available during the season.

  6. This is just like how my grandmother made potato salad, except we use parsley only, not mint, but the rest is the same! Amazing! And we call it "Italian Potato Salad".
    I once had a Lebanese boyfriend from Beirut, who made fried cauliflower for me - again, just like my grandmother used to make. So funny!

  8. Hi, name is: Aline /Lebanese. It happens that I was looking the name of the Sele2 in English before I jammed in this wonderful site. so I am new here...I found our Great and tasty recipes. I prepared this potato salad right just before I went to work early today. I have to feed the kids...! Serving it with mjadara. by the way , my dad taught me not to ground or blend my lentil for the mjadara. so I cooked it the same way as mjadara. but a lot less of rice. I.e. one cup of lentil let it boil in water with salt and cumin when its half done I add my 1 quarter of rice. after the rice is done I poor over it fried spiced onions let it boil all together it become thick not m achy. Then I serve it in seperate plates. I kinda like it better this way and it save me time as well washing blender and plates...thank you wonderful people!
