Lentils Salad - عدس متبل- (Adas Moutabbal)


This is a very simple salad. It can be served with pita bread and a plate of fresh vegetables on the side: like green onions, fresh mint and radishes.

Serves 3-4
Ingredients:
1 cup of lentils
1/3 cup of chopped onions
1 small clove of garlic, mashed
1/4 cup of fresh chopped parsley
Juice of 1 lemon
About a 1/3 cup of Olive oil
Salt & pepper to taste

Wash and drain the lentils, make sure that they're clean then add to a saucepan with 4 cups of water and some salt and bring to a boil. Then reduce the heat to medium and let the lentils cook. After they're cooked, drain the water then transfer to the serving bowl, add the garlic, onions, parsley, salt & pepper, lemon juice and olive oil. Mix the ingredients well and serve.

I love lentils. I know that they're not generally a GLAMOROUS legume, but they're affordable, delicious, full of fibre and protein, and so versatile!

Your simple lentil salad looks deeelightful!

Looks good. I love lentils, but I only ever have them in soup. I'll try them in a salad next, I'm sure it's yummy :-)

i made this recipe the other night and it turned out great...everyone loved it. it was a nice different kind of salad. i added diced tomatoes to it. thanks again for sharing this great salad recipe.
