Shish Taouk (Chicken kebabs) - شيش طاووق
Shish Taouk is marinated chicken cut into cubes or big chunks and marinated at least overnight then baked, grilled or even cooked on the stove surface. The main ingredient of the marinade is garlic!!! Shish Taouk is normally put on skewers and grilled but this time I wanted to bake it in the oven since we were not having a barbecue. I served it with home made french fries.
Serves about 4
Ingredients:
1 pound of chicken cut in cubes (I normally like chicken breasts)
1 cup of plain yogurt
5 or more cloves of garlic, crushed
1 tablespoon of tomato sauce
2 tablespoon lemon juice
1 teaspoon paprika
1/2 cup of Olive oil (or canola oil)
Salt & pepper to taste.
In a bowl add the chicken and all the ingredients above, mix all ingredients very well and place in the refrigerator overnight or all day. You can also stack this in the freezer and use it whenever you want.
Bake in the oven until the chicken is fully cooked but don't let it dry. Or put on skewers and grill (I will post the grilled version soon too). Shish Taouk can be served on pita bread or tortilla and rolled as wraps with coleslaw and fries. You can get creative!!!!!!

am going to try this for a bbq (I bbq chicken all the time) it looks good but have never tried yogurt in a marinade before...My favorite marinade that I use is bottled italian dressing but will try this out for variation

ReplyDeleteIt's great to read about Lebanese version of one of my favorite kababs. We make shish chicken kabab too, our our marinade it in lots of onion and salt only. Lebanese version l0oks and sounds delicious too!

Although she is an excellent cook when it comes to Masri fare- kebab (reásh); ro'a; wara eynab -etc, she doesn't know how to do tawouk, which happens to be my favorite bbq fare. Your recipe has been most useful. All the other recipes I have found on the Net have been adapted by Western palates, so its gr8 to find an authentic tawouk recipe by someone who is an obvious expert. Merci.

ReplyDeleteTonight I'm making tawouk as per your recipe for the 5th time. Always turns out to be a success. I can now make it without having to refer to your recipe anymore. By the way, it tastes good on both a charcoal bbq and an electric indoor grill. I alternate between making your tawouk and Irani joojeh kebab - both are in my opinion, the best things that can be done with chicken. Mag, do you have any fish recipes that are barbecue oriented? By the way, I barbecued in the Dubai heat at the weekend. Middle Eastern food only - made my own kofta; re-ash; tomato lamb cubes; tabouli -etc. It was about around 36 degrees celcius when I did the grilling in the evening - ana hamoot! Anyways, the tawouk was the usual success. Thanks.

Bonjour! Was at Suez Canal area last week, and had a bbq with wife's family. The 6th batch of tawouk was...yep, you guessed it...an outstanding success. The Egyptians couldn't stop complimenting the recipe. Anyhows, gottsa run, as I'm working on the 7th batch of tawouk now.
